Grilled Salmon (printable version)
Salmon steaks or filets on the Grill are one of our guests favorites. It seems that Salmon was specially created to be grilled!

1 Salmon Steak or Filet per person
Olive Oil
Dry ground Thyme or Bad Byron's Seafood Jubilee
Lime or Lemon Juice

Brush Salmon steak or filet with olive oil. Lightly sprinkle with thyme. Allow to sit 1 hour before grilling. Grill on a HOT grill, covered with aluminum foil, about 5 minutes on each side.

One or 2 minutes before done, drizzle with Lime or lemon juice.

Serve immediately.

Honey, Lemon & Almond Crusted Salmon Filets

2 boneless salmon filets, split
2 tbsp honey
2 tbsp lemon juice
2 tbsp almonds coarsely & finely chopped
1 tbsp canola oil
1 tsp tarragon

Lightly spray glass baking dish with cooking oil.  Combine honey, lemon juice & canola oil in a small bowl.  Place salmon halves skin side down on baking dish.  Brush with honey & lemon mixture.  Sprinkle with tarragon.  Bake in preheated 500 F oven for 12 minutes.  Remove from oven.

Sprinkle baked filets lightly with chopped almonds. Place filets under broiler for another 2 to 3 minutes or until lightly browned.

Serve with lemon slices.

For variety, use orange juice in place of the lemon juice.
